Preparation

  1. Cook the yucca in a large pot with salted water over medium heat for about 10-15 minutes or until soft. Clean the cassava and remove all the fibers from the center. Transfer to a large bowl and puree.
  2. Place the eggs in one bowl and the breadcrumbs in another bowl.
  3. Form 12 croquettes with the puree. Flatten each ball with your hands and place 1 piece of cheese in the center and form the ball again to cover the cheese.
  4. Dip the balls into the beaten egg coating all sides, then coat with breadcrumbs.
  5. Fill a large skillet with oil and heat over medium-high heat to 350F. Place the yuca balls in the hot oil and fry for 4 minutes or until golden brown on all sides. Remove the yuca balls from the oil and place on a plate covered with paper towels.
  6. Serve with guacamole or salsa
