Recipe: Yuca Croquettes

Ingredients:
- 1 pound of fresh cassava , peeled
- 2 beaten eggs
- 1/2 cup breadcrumbs
- 1/2 pound pita or mozzarella cheese , cubed
- Vegetable oil for frying
Preparation
- Cook the yucca in a large pot with salted water over medium heat for about 10-15 minutes or until soft. Clean the cassava and remove all the fibers from the center. Transfer to a large bowl and puree.
- Place the eggs in one bowl and the breadcrumbs in another bowl.
- Form 12 croquettes with the puree. Flatten each ball with your hands and place 1 piece of cheese in the center and form the ball again to cover the cheese.
- Dip the balls into the beaten egg coating all sides, then coat with breadcrumbs.
- Fill a large skillet with oil and heat over medium-high heat to 350F. Place the yuca balls in the hot oil and fry for 4 minutes or until golden brown on all sides. Remove the yuca balls from the oil and place on a plate covered with paper towels.
- Serve with guacamole or salsa
