Chicken Broth Recipe with Rice & Vegetables

Chicken bone broth has many health benefits. In addition to being an extremely healthy recipe (one cup can contain only 15 calories) it can also help:
- reduce congestion
- reduce inflammation
- slim down
- improve joint pain
Ingredients
- 1 whole chicken (cut into pieces, use the pieces in another recipe. Use the bones to make the broth)
- ½ onion
- 3 garlic cloves
- 1 bouillon cube (optional)
- 1 tablespoon of salt
- ½ teaspoon black pepper
- 2 whole tomatoes
- 1 chili pepper , seeds removed
- 4 stalks celery
- 5 coriander sprigs
- 2 whiskey
- 4 Peruvians
- 3 carrots
- 8 potatoes
- 6 guicoyitos
Preparation
- Boil the chicken in water with onion, garlic, broth, salt and pepper for approximately 40 minutes.
- Remove the chicken and season with more bouillon, salt and pepper to taste.
- Strain the broth to remove remains of garlic and onion.
- Put tomato, chili pepper, celery, cilantro, guisquil, peruleros, and carrots in the pot.
- Bring to a boil over high heat for 10 min.
- Add potato and guicoyitos to the broth and cook for 15-20min (until they are cooked).
- Remove from the fire. Scoop out the tomato, chili pepper, and celery with a fork.
- Serve the broth and vegetables with rice or noodles.
