Chicken Broth Recipe with Rice & Vegetables

Chicken bone broth has many health benefits. In addition to being an extremely healthy recipe (one cup can contain only 15 calories) it can also help:

  • reduce congestion
  • reduce inflammation
  • slim down
  • improve joint pain

Ingredients


Preparation

  1. Boil the chicken in water with onion, garlic, broth, salt and pepper for approximately 40 minutes.
  2. Remove the chicken and season with more bouillon, salt and pepper to taste.
  3. Strain the broth to remove remains of garlic and onion.
  4. Put tomato, chili pepper, celery, cilantro, guisquil, peruleros, and carrots in the pot.
  5. Bring to a boil over high heat for 10 min.
  6. Add potato and guicoyitos to the broth and cook for 15-20min (until they are cooked).
  7. Remove from the fire. Scoop out the tomato, chili pepper, and celery with a fork.
  8. Serve the broth and vegetables with rice or noodles.
