To make Berdié Rupestre, only traditional varieties have been used: Macabeo, Xarel lo and Parellada. Each of these grapes is vinified separately with controlled temperatures, then the coupage is carried out, the combination with the appropriate proportion of each of the varieties, to achieve the personal line of this cava. With the second fermentation in the bottle, we will achieve the foam intake according to the traditional method, to finish with an aging of more than 15 months in the underground cellar.

CATA'S NOTES

Visual Phase: Bright yellow color with green flashes. Appearance of fine bubbles that rise through the glass forming the typical crown.

Olfactory Phase: Expressive and intense nose, very defined aromas of white fruit, green apple, pear or claudia plum and a certain vegetable and citric character with a subtle floral background.

Palate : Intense and fruity, with a good acidity that makes it very fresh, notes of apple, grapefruit and scrubland (aromatic herbs). Good balance with the final notes of aging and a very pleasant mid palate.

Varieties: Macabeo, Xarel lo, Parellada.

Aging: from 15 to 27 months - reserve -

Alcohol: +/- 11.5%.

Tasting notes: White fruit, green apple, citric, floral, very dry.

Pairing: salads, shellfish, fish, white meat and pasta.
