Goat Cheese - T'zite (Olive & Oregano)

Tzite cheese is a soft and brittle cheese marinated in oil and oregano, named after the tzite tree that our grazing goats feed on. It is based on Greek feta cheese, a cheese with high salinity and matured in brine, with less pronounced saltiness and more developed acidity. It already has a dressing of olive oil and oregano, which complements its flavor. It is a good cheese to eat in salads and appetizers. It can be substituted for salt in different recipes, adding the complexity of the goat's flavors to these preparations.
