The Ruxipua is a cheese matured between 3 to 4 months at 1800 meters above sea level. A natural rind cheese, its rustic elaboration gives it a distinctive and tart, but not overpowering flavor, reminiscent of Manchego and Parmesan. It is recommended to eat the cheese with the crust for a more complete flavor experience. Its texture can range from brittle to semi-firm, depending on the time of manufacture. It can be eaten alone or together with red fruits and honey. To cook, grate and add to gratin or in sauce. It can be accompanied with wine.
