Tzin, Yuca: Manihot esculenta Crantz (EUPHORBIACEAE)

Roots very rich in starch, proteins, some fats and vitamin C and B6; also minerals such as potassium and magnesium. It is consumed green or as flour. Different products can be obtained: starch, starch, cookies, pasta, glue, glucose, alcohol.

As it does not contain gluten, it is suitable for people with celiac disease or those allergic to gluten.

The dried cassava peel can absorb a large amount of water, up to 120% of its weight, due to its internal structure (as if it were a sponge); if it is arranged between the crops it helps to maintain humidity

Other uses: The leaves, dried and ground: food for birds and pigs.

By fermenting the roots, alcohol can be obtained.
