Ghee is known in India as “liquid gold.†It is a type of clarified butter with a process in which all animal protein is removed. Regular butter has three components: milk solids, fat, and water. During clarification, all the milk solids and water are removed and only the fat remains. Because of this, ghee is an appropriate choice for those with allergies to casein or dairy. Also, like coconut oil, it's made from medium chain fats, so it's another option for cooking. The difference is that the ghee will add a rich buttery flavor to the food.
Requires refrigeration 3 months after opening. It will last another year in the fridge.
