Vegetable Soup Recipe

Ingredients:
- ½ red onion , chopped
- 1 carrot
- 3 celery , save the leaves
- 2 garlic cloves
- 1 zucchini
- 1 tablespoon coriander
- 1oz fresh oregano
- 2 bunches of spinach
- 1 cup chickpeas
- 3 cups of water
- 1 teaspoon olive oil
- Salt and pepper to taste
Preparation
- In a pot, fry the red onion, carrot and celery with olive oil. Add garlic and zucchini.
- Add cilantro, oregano sprigs, celery leaves, salt, and pepper.
- Add the 3 cups of water and boil for 10 minutes.
- Add the chickpeas and spinach. Boil for 3 more minutes.
- Scoop out the celery leaves and oregano sprigs.
- Enjoy!
