Recipe: Vegan Mushroom Soup
Vegan Mushroom Soup Recipe
Serves: 4 servings

Ingredients
- 1 tablespoon cold-pressed coconut oil
- 1 onion small, chopped
- 5 teeth garlic , minced
- 1 tablespoon of oregano (can be dried or fresh)
- 1 tablespoon basil (can be dried or fresh)
- 1 bag mushrooms , whole
- ½ bag of crimini , whole
- 2 portobellos , coarsely chopped
- 2 tablespoons tamari or soy sauce
- ½ liter of coconut milk
- Salt and pepper to taste
Procedure
- In a pot, add the coconut oil and fry onion, garlic, oregano and basil for 2-3min.
- Add the mushrooms and tamari. Stir over medium high heat and cover the pot for 10min. This will cause the mushrooms to shed their water.
- After 10 minutes, uncover the pot and cook for another 10 minutes so that the water released by the mushrooms burns a little.
- Add the coconut milk, stir and cook for 10 minutes so that the flavors blend well.
- Add salt and pepper to taste and serve hot.
- Serve and add cilantro, avocado, and lemon to taste.
