Chicken with Plums and Olives
Chicken with Plums & Olives Recipe

Serves: 6 servings
Ingredients:
- 3 minced garlic cloves
- 1/3 cup pitted plums , halved
- 8 small olives
- 2 tablespoons capers, with the juice
- 2 tablespoons extra virgin olive oil
- 2 tablespoons of red vinegar
- 2 bay leaves
- 1 tablespoon oregano
- Salt and pepper to taste
- 1 whole chicken , skin removed and cut into pieces
- 1/4 cup brown sugar
- 1/4 cup dry white wine
- 1 tablespoon fresh parsley (garnish)
Preparation
- In a bowl, combine the garlic, plums, olives, capers, olive oil, vinegar, bay leaves, oregano, salt, and pepper. Mix well. Spread the mixture in the bottom of a pyrex. Add the chicken pieces and mix until they are covered with the mixture. Cover and refrigerate overnight.
- Preheat oven to 350 degrees F. Remove pyrex from refrigerator. Pour panela over the chicken and pour the white wine around the chicken.
- Bake in the preheated oven for 1 hour, basting the chicken several times as it bakes. Serve on a plate with the juice on top and decorate with the parsley.
