Recipe: Vegan Mac & Cheese
Vegan Mac & Cheese Recipe

Ingredients:
- 1 guicoy seasoning
- 1 cup coconut milk
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 3 teaspoons apple cider vinegar
- 2 teaspoons mustard (mustard prepared with grains)
- 1/3 cup nutritional yeast
- 1 teaspoon turmeric powder
- 2.5 teaspoon salt
- ¼ teaspoon cobanero chile powder
Preparation
- Preheat oven to 400 F/200 C
- Cut the güicoy in half, and place it on a tray upside down
- Add ½ cup of water to the tray, and put it in the oven
- Bake for 30-40 minutes, or until you can stick a fork in the güicoy without effort.
- Remove from the oven, let cool for a moment and then, with the help of a spoon, remove all the meat from the güicoy and put it in a blender
- Add all the ingredients to the blender and blend until everything is incorporated and without lumps.
- Add salt to taste and mix with your favorite pasta
