Vegan Chili Beans

Ingredients

2 cup black beans
2 cup red kidney beans
1 whole jar peeled tomatoes from Cal Valls
1 tin tomato paste
1 chopped onion
2 jalapeños , seeded and chopped
3 garlic cloves, minced
2.5 liters of water
1 sprig of thyme
1 tablespoon of oregano ,
3 bay leaves
1 diced carrot
a pinch of cumin
1 teaspoon cayenne (optional to add heat)
1 teaspoon of brown sugar
1 teaspoonvinegar
Salt and pepper to taste


Preparation

With Instant Pot - Add all the ingredients and let them cook for an hour and a half

with pressure cooker
1. Cook the beans with the water for 50 minutes
2. Having cooked the beans, add the other ingredients and let them cook for half an hour.

Tip: You can add ground meat
Tip: You can accompany with chopped raw onion, chopped cilantro and sour cream.
