Ingredients:
- 50 chicken wings (10lbs)
- ¼ cup flour
- Salt and pepper to taste
- 1 tablespoon of extra virgin olive oil
sauce ingredients:
- ½ cup honey
- 4 tablespoons soy sauce
- 4 garlic cloves , minced
- 1 tablespoon fresh ginger , chopped
- ½ teaspoon chili flakes (optional)
- ⅓ cup water
- 1 teaspoon cornstarch
Preparation:
1. Preheat oven to 425°F. Rub wings with paper towels until completely dry.
2. Mix the wings with flour, salt and pepper. Scoop off excess flour and brush with olive oil.
3. Cover a pan with aluminum foil then place parchment paper on top (you may need 2 pans) and bake for 35 minutes turning the wings after 20 minutes.
4. Meanwhile, combine sauce ingredients in a small skillet. Bring to a boil, reduce heat, and simmer about 10 minutes or until slightly thickened and sauce coats the back of a spoon.
5. Remove wings from oven, toss with sauce, and return to oven for 10 minutes, turning after 5 minutes.
6. Let cool 10 minutes. As the sauce cools, it thickens. Stir the wings every few minutes to coat with the sauce as it thickens.
